The ‘Fieldie’ is a co-ferment of Sauvignon Blanc and Semillon grapes from organically grown Wallcliffe Vineyard. Handpicked with friends from 40 year old vines on the eve of the harvest moon equinox on the twenty first of March 2019.
This is a wild, open fermented blend of fruit with 1 to 5 days of skin contact before being pressed to neutral French oak barriques
In short…. a skinsey, textural, must ferment wine.
