Semillon sourced from Wilyabrup and harvested early to retain natural acidity. The fruit was pressed to stainless and fermented with combination of Pichia kluyveri and Saccharomyces cerevisiae yeasts. The wine was fermented dry and racked off heavy lees before it was re-inoculated using Cabernet juice when it was being processed during April. Once ferment had recommenced, the wine was hand bottled.
