Southern Margaret River fruit organically farmed in Karridale, wild fermented in stainless steel for fruit expression, then racked to seasoned French oak for 6 months elevage. The time in oak bringing a softness to the natural acid and rounding out the fruit. A soft, spicy nose of raspberry and a hint of white pepper. Vibrant and crunchy acid on the palate with lots of cherry and red apple skin, finishing tight and lean. Will do well over Summer fresh from the ice bucket or fridge.
