Glass Slipper Fortified White

700ml / 18% ABV

A small parcel of Chardonnay and Semillon grapes from

Rosa Brook was selected for Glass Slipper. The grapes were

handpicked, crushed and pressed before the juice was ready

to start fermentation. Brandy spirit was later added to stop

fermentation early, resulting in a sweeter and higher alcohol

fortified wine. The wine was kept on lees for 12 months and had a

total of 30 months in aged cognac barrels.

Pale to medium lemon

Aroma

The Glass Slipper displays aromas of green apple, preserved

lemon with a savoury/salty undertone.

Palate

The palate is medium-sweet, savoury with green apple and a

hint of toasted almond. It is a full bodied wine that exhibits rich

flavours and balance with the addition of grape spirit. The finish

is long and dry.
